Dear Retail Food Establishment Operator,
All retail food establishments must be constructed and operated in compliance with the Colorado Retail Food Establishment Rules and Regulations. Colorado law (25-4-1605 CRS, 1998) requires complete plans and specifications be submitted to the Health Department for review and approval prior to starting construction or remodeling of any retail food establishment.
A $100.00 plan review application fee must be paid at the time the plans are submitted. A review fee of $44.00 per hour will be charged for the actual plan review. The cost of the actual review will not exceed $580.00. To keep your review costs to a minimum, it is important to make sure the submitted plans are complete and accurate. It is highly recommended that you make an appointment to meet with one of the Department's Environmental Health Specialists so the plans can be checked before they are submitted for the formal review.
All review fees, a valid state retail food establishment license and written approval from the Health Department is required before the start of operation.
